A Better Soup for the Soul
I’m just loving soups right now. So far the winter has been pretty harsh in the northeast. A great soup and a grilled panini on gluten-free bread makes an easy lunch for a crowd, and it’s warm and satisfying for these icy-cold days.
I’m often inspired by eating out, and this soup is no exception. My favorite Indian takeout restaurant has a spinach lentil soup that is to die for. It’s creamy and flavorful and full on spicy! I’ve pulled in the reigns a bit here and made this version a little less fiery. I also use less coconut milk to make it leaner and healthier. It’s still packed with all of the exotic flavors I love about Indian food, and because you make it at home, you know exactly what goes in it.
