Get Back to Good

It’s a new year and it’s time to get back on track. For me that means getting back to posting great gluten-free recipes here, for you, every Sunday. And if you are like most people, getting back on track probably means watching what you eat and taking better care of yourself.

I get it. It’s winter, you’ve been indulging and enjoying the holidays. You deserved it, right? Well you’ve probably put on a few pounds, and now is the time to get back to good. I’m here to help with hearty, healthy gluten-free meals that won’t leave you feeling deprived. From now on, all of my recipes will include the nutritional information you need to make the choices that are right for you.

To get started, try my Chipotle Black Bean Soup. It’s easy to put together, has tons of flavor, and it will leave you feeling full and satisfied too. I serve it with low-fat sour cream and soft corn tortillas for a complete meal in just over 400 calories and 3 grams of fat.

Happy New Year to you!

Easiest black bean recipe I’ve ever made. It was a big hit with the family. I added a little extra salt, and kept everything else the same. Will definitely make again!
