Simple Potato Gnocchi

We’ve had a lot of snow in the northeast lately. The other day I was sitting at home on a snowy afternoon wondering what to make for dinner. I really didn’t feel like trekking outside all bundled up to go to the grocery store, but I’m embarrassed to say that I had barely anything in the house; a chef should be better prepared! I was even out of go-to items like gluten-free pasta, but I was in the mood for something hot and filling…

On hand I had: 3 potatoes, a bag of spinach, and some goat cheese (I love goat cheese and almost always have some in the cheese drawer). Using a few other staples, and with just about an hour’s time, I made Gnocchi with Creamy Goat Cheese and Spinach Sauce.

Gnocchi are small potato dumplings, and if you’ve never tried them, why not tonight? If you don’t have any of the sauce ingredients at home, the gnocchi are still fabulous with jarred pasta sauce or some butter and a sprinkle of Parmesan cheese.
