Pasta is a great go-to meal any night of the week. I’ve prepared gluten-free pasta for many unsuspecting guests, who never notice it isn’t the traditional stuff they are used to! We are very lucky that there are so many gluten-free options out there. Most are made with quinoa, corn, rice, or some combination of these. Experiment with brands and cooking times to find a flavor and texture you like. These ideas will help you use what is in your pantry to make a delicious and budget-friendly meal in a snap.
Asian Garlic Noodles: Sauté lots of chopped garlic in sesame oil. Add sliced veggies such as cabbage, carrots, asparagus, and sprouts. Cook to al dente. Add gluten-free soy sauce and cooked rice noodles or gluten-free angel hair pasta.
Pasta with Spicy Sausage: Sauté Italian sausage and red chili flakes in some olive oil. Add a can of rinsed white beans, and cooked, chopped broccoli rabe. Add cooked gluten-free pasta and top with grated parmesan cheese.
BLT Pasta: On a baking sheet roast cherry tomatoes under the broiler until the skins are charred. Cook chopped bacon (or turkey bacon) until crisp. Add tomatoes, bacon, and fresh arugala to hot GF pasta.
