Almond Cake

Almond Cake
Serves 8-10

This basic recipe is a blank canvas for your imagination. Get creative and dress it up with your favorite dessert sauce.

5 egg whites, room temperature
pinch of salt
¾ cup granulated sugar
3 cups ground almond meal
4 tablespoons unsalted butter, melted and cooled
1 teaspoon vanilla extract

1. Preheat oven to 350°F. Lightly grease 9-inch spring form cake pan.

2. In a medium bowl, using an electric mixer, beat the egg whites and salt until soft peaks form. Gradually add the sugar and beat until stiff peaks form. Fold in almond meal, melted butter, and vanilla extract.

3. Gently pour the mixture into the prepared pan. Bake 20 minutes, or until golden and the sides begin to pull away from the pan.

4. Cool the cake on a rack, then run a knife around the edge of the pan to loosen the cake. Turn out the cake onto a plate. Cool completely.
