Balsamic Pasta Salad with Tomatoes and Mozzarella
I love the way sweet balsamic vinegar contrasts the rich and salty mozzarella cheese in this salad. A healthy dose of Dijon mustard emulsifies the vinaigrette so that it’s thick and rich and coats the pasta nicely.
2 cup brown rice penne pasta
4 tablespoons balsamic vinegar
2 teaspoon honey
1 tablespoon plus 1 teaspoon Dijon mustard
1/3 cup olive oil
1 1/2 cups fresh mozzarella, cubed
1 1/2 cups cherry tomatoes, halved
1/2 small red onion, thinly sliced
1/4 cup basil leaves, chopped
salt and pepper to taste
1. Cook pasta according to package directions. Drain the pasta and rinse under cold water. Set aside.
2. Meanwhile, in a medium bowl, whisk together the vinegar, honey, Dijon, and olive oil.
3. Add the pasta, mozzarella, tomatoes, red onion, and basil. Season to taste with salt and pepper.
