Chipotle Black Bean Soup

Chipotle Black Bean Soup
Serves 6

This soup makes a great lunch or a light dinner. Black beans are packed with fiber and protein and are extremely filling. This soup freezes well too, so keep some on hand for when you’re pressed for time but still want a healthy, hearty meal.

For the Soup
10 cups water
16 ounces dried black beans
2 bay leaves
1 handful of cilantro stems, tied together with kitchen twine
4 cloves of garlic, roughly chopped
2 stalks of celery, chopped
1 large onion, chopped
2 medium carrots, chopped
1 chipotle chile in adobo, chopped, plus 1 tablespoon of the adobo sauce
1 teaspoon ground cumin
1/2 teaspoon coriander
salt and pepper to taste

Serve With
The juice of 1/2 of a lime
8 teaspoon lowfat sour cream
6 soft corn tortillas

1. Throw all of the ingredients for the soup into a large pot. Cook over medium heat until the soup begins to boil, then turn the heat down, cover and let the soup simmer gently for 3 hours, or until the beans are tender.

2. Remove the cilantro stems and bay leaves. Transfer 1/2 of the soup to a blender or food processor, and let cool 10 minutes, then process until smooth. Transfer back to the pot and season the soup with salt and pepper. Add the lime juice to the soup for a burst of freshness and acidity. Adjust the consistency with more stock or water if the soup is too thick. Season to taste with salt and pepper.

3. Turn one of the burners on your stove to medium-low. Heat the corn tortillas, one by one over the open flame, a few seconds on each side until they are soft and pliable. Set aside. Ladle the soup into bowls, garnish with sour cream and serve with the tortillas.
