Light and Easy Creamed Spinach

Light and Easy Creamed Spinach
Serves 4

This recipe is easy breezy and so yummy!

1 teaspoon olive oil
3 cloves of garlic, chopped
1 16 ounce package of baby spinach
4 ounces nonfat cream cheese
1/4 cup grated Parmesan cheese
salt and pepper to taste
freshly grated nutmeg to garnish, if desired

1. Heat the olive oil in a large sauté pan over medium heat. Add the garlic and cook until the edges begin to turn golden brown.

2. Add a handful of spinach and cook until it begins to wilt, then repeat with the remaining spinach until all of the spinach is wilted.

3. Transfer the spinach to a colander and drain any excess water. Transfer back to the pan and add the cream cheese and Parmesan and continue to cook until the cheeses have melted and the mixture is smooth and creamy. Season to taste with salt and pepper, then plate or pour into a serving dish. Garnish with freshly grated nutmeg, if desired.
