Rocky Road Almond Butter Balls
Makes 50 Bite-Sized Treats

I’ve seen organic almond butter in the stores for up to $17 a jar! At stores like Trader Joe’s you can get a much better deal, but if almond butter still isn’t in your budget, try these with natural peanut butter- a fraction of the cost and just as delicious!

1 16 ounce jar crunchy almond butter
1 1/2 cups gluten-free brown rice crispies
1 cup gluten-free corn flakes, crushed
1 cup plus 1/2 cup gluten-free oats, divided
1/2 cup flax seed meal
1 cup dark chocolate chips
1 1/2 cups mini marshmallows
1/8 teaspoon salt

1. In a large bowl using a wooden spoon, or stand mixer fitted with a paddle attachment, combine the almond butter, rice crispies, corn flakes, 1/2 cup of the oats, flax seed meal, chocolate chips, mini marshmallows, and salt. Stir until all ingredients are thoroughly mixed.

2. Place the remaining 1 cup of oats into a small bowl. Using your hands, roll the almond butter mixture into bite-sized balls, then toss to coat the balls in the oats. Place onto a cookie sheet, and repeat with the remaining mixture.

3. These store well in the freezer and will keep in ziploc storage bags for 2 months.

    Thank you for this recipe, have been looking for more no bake treat recipes and this is healthy as well as sweet. I don’t have the krispies and the flakes and have a limited amount of $$ to spend on food, but perhaps will sub organic granola for the cereal parts?

    That’s one aspect of cooking, one can do substitutes and improvise when necessary.
