    Air Fried Potato Wedges with Garlic Aioli

    These air fried potato wedges are fresh, crispy, and a little bit spicy. Served with a homemade garlic aioli that certainly packs a punch! These are the perfect side dish to accompany your summer BBQ. Oven instructions included as well.

    These air fried potato wedges are the perfect accompaniment for your next summer BBQ. They're super flavourful and relatively healthy since there is minimal oil required. Served with a homemade garlic aioli sauce that you're going to want to put on just about everything you eat. 

    These potato wedges are also great for when you have several other dishes on the go, as they can be made in the air fryer to free up your stove/oven. Perfect for when it's super hot outside and you don't even want to turn on your full oven! That being said, there are instructions below for oven baked potato wedges if you don't have an air fryer.

    What is an Air Fryer?

    An air fryer is a small countertop appliance that is basically a mini convection oven. It can cook food quickly and with minimal oil by circulating hot air. It often contains an inner basket with holes to allow for this circulation. Air fryers are great for making healthier versions of your favourite foods, since less oil is needed to get that "crispiness". Use it to bake, toast, reheat, cook, etc. Basically if you can bake it in the oven, you can air fry it, and probably much faster. 

    I will say that it's worth it to get a larger size if you have space for it. Multiple batches are often required if you're doing larger quantities in an air fryer. This is the one I have and I love it! I highly recommend adding an air fryer to your kitchen appliance repertoire. 

    Note: Be careful with gluten cross-contamination in any small appliance like an air fryer. Air fryers have dozens of tiny holes for the hot air to circulate. That is the perfect place for gluten particles to hide. If you are celiac or have a severe gluten intolerance, please look into having your own dedicated gluten-free air fryer.

    Ingredients Needed

    Here is everything you'll need to make these gluten-free air fried potato wedges:

    This easy side dish is gluten-free, dairy-free, vegan, vegetarian, healthy, AND delicious. What more could you ask for? A few notes on the ingredients...

    Spice Mix Ingredients

    • Paprika: Adds a little heat to these wedges. Use whatever type of paprika you have and like best (ex. smoked paprika, regular).
    • Garlic powder
    • Oregano
    • Italian seasoning: Typically a combination of dried basil, oregano, rosemary, thyme. You can throw in a dash of each spice if you don't have an "Italian seasoning", or simply omit.
    • Sea salt: Potatoes need a lot of salt!
    • Onion powder
    • Black pepper

    Potato Wedge Ingredients

    • Russet potatoes: The most common type of potato for wedges, russet potatoes have a high starch content and get very crisp when baked or air fried.
    • Avocado oil: My favourite oil for high heat cooking since it is neutral in flavour and heart-healthy. Use any oil you have - olive oil would also work.
    • Spice mix
    • Flakey sea salt and fresh parsley: to garnish.

    Garlic Aioli Ingredients

    • Mayonnaise: Use vegan if you prefer.
    • Fresh garlic: Fresh garlic will seriously blow your mind. Normally, I'm all for the ease and convenience of the pre-minced jugs of garlic - they're so easy! But if you can get a couple of fresh cloves for this sauce, it will make a world of a difference.
    • Garlic powder: For just a little extra garlic kick.
    • Sea salt
    • Fresh lemon juice: This brightens up the sauce so much! Fresh lemon juice is the best, but any will do here.

    Step-by-Step Instructions

    Be sure to read the recipe card below for the full ingredient list and instructions.

    Making the Potato Wedges

    (Prep) Thoroughly wash the potatoes. Do not peel. 

    (1) Chop them into wedges by cutting in half lengthwise. (2) Cut the half in half lengthwise again, and once more (3). This will result in 8 wedges per potato. If your potatoes are particularly large, you may have to cut once more. Repeat for all potatoes.

    (4) Place the potato wedges in a large bowl filled with cold water and ice. Let them sit there for 10 minutes. This will help remove some of the starch and make them extra crispy.

    While the potatoes are soaking, preheat your air fryer (or oven) to 400°F. Also mix together the spices in a small bowl.

    Once the potatoes have soaked for 10 minutes, drain and thoroughly dry them with paper towel. Place the wedges in a large bowl. (5) Pour the avocado oil and spice mix over the wedges. Toss with tongs or your hands to ensure all wedges are evenly coated with the oil and spice mix.

    (6) Carefully place the potato wedges in the preheated air fryer, lining them up to create 1 layer. You don't want any wedges on top of each other for optimal crispiness. This may mean you have to do 2-3 batches of air frying. Close the air fryer and set your timer for 15 minutes. Check on the wedges around 12 minutes to ensure they aren't getting too crisp.

    Once done to your liking, remove the potato wedges to a plate and add any remaining wedges to the air fryer to cook for another 15 minutes. While waiting, jump to the Garlic Aioli instructions to prepare the dipping sauce.

    Oven Instructions

    (7) If you don't own an air fryer, you can still totally make these crispy potato wedges. Preheat your oven to 400°F while the potatoes are in the ice bath. Follow the same instructions to coat them with the oil and spice mix, then place the potato wedges on a parchment-lined baking sheet. Bake the wedges for 30-33 minutes, flipping halfway. Since you can likely fit more potato wedges in the oven, you will only have to bake 1 batch.

    Once they're golden and crispy, place on a serving dish, and sprinkle with flakey sea salt and fresh parsley to garnish. Add a squeeze of fresh lemon if you wish. Enjoy your crispy air fried potato wedges dipped in garlic aioli!

    Making the Garlic Aioli

    To make the garlic aioli, combine all ingredients together in a small bowl or ramekin. Be careful not to get any seeds from the lemon (juice) in the sauce. Set aside in the fridge until ready to serve.

    Storage Instructions

    Any leftover potato wedges can be stored in the fridge in an airtight container. When ready to serve again, reheat in the air fryer at 400°F for about 3-5 minutes. They will get crispy again just like when they were fresh! Extra garlic aioli can also be covered and stored in the fridge. Keep no longer than 2 days.

    Expert Tips

    • Thoroughly dry the potatoes. This will help to get rid of the excess moisture and starch for ultimate crispiness.
    • Watch the wedges while cooking. Everyone's air fryer and oven are a little different, so be sure to check on your wedges a few minutes before the end of the designated cooking time.
    • Use fresh garlic in the aioli. Seriously, it will make a huge difference in the flavour. Spend the 2 minutes mincing and you'll thank me later!

    What if I don't have an air fryer? 

    You can still make crispy, flavourful potato wedges! See the recipe card for oven instructions. 

    What makes these potato wedges healthier?

    Air fryers can make your dishes a bit healthier by requiring less oil to get a crispy exterior. This is because they operate as a mini convection oven, circulating hot air rapidly around the food. This is what achieves a crispy texture with minimal extra oil.

    Can I make a vegan garlic aioli? 

    Yes! The base of the garlic aioli is mayonnaise, so use a vegan mayonnaise if you wish for this dish to be entirely vegan.

    Can I make this recipe in advance? 

    While these potato wedges are best served freshly made, you can store them (pre-cooked) in the fridge for 2 days, or the freezer for 1 month. Simply preheat the air fryer to 400°F again and reheat the wedges. You will have to watch them every few minutes to ensure they do not burn and are fully defrosted and crispy again.

    Spice Mix

    • 1 teaspoon paprika
    • ½ teaspoon garlic powder
    • ½ teaspoon oregano

    • ¼ teaspoon onion powder
    • ¼ teaspoon black pepper

    Potato Wedges

    • 4 medium-sized russet potatoes, or 6 smaller ones
    • 2 tablespoon avocado oil
    • spice mix
    • flakey sea salt and fresh parsley to garnish

    Garlic Aioli

    • ½ cup mayonnaise
    • 2 cloves fresh garlic, minced
    • ½ teaspoon garlic powder
    • ¼ teaspoon sea salt
    • juice of ¼ lemon

    Instructions

    Air Fried Potato Wedges
